Baked mushrooms with a simple green salad.

The weather in Sydney this weekend has been perfect and it’s making me a little sad that I have to return to work tomorrow. I’ve had a lovely weekend catching up with friends, relaxing and of course a trip to the beach.

Today is market day and after eating a bit too much ham and turkey over the past few weeks I thought a vegetarian meal was in order. Not all of the stall holders were back today but I did manage to find a bag of beautiful fresh mixed mushrooms. Mushrooms that are fresh are quite unlike the sterile white ones that you can purchase at the supermarket and tonight my aim was to make them the star of my meal!

Baked mushrooms are a fantastic, light dinner than can be made in no time at all. I’ve paired mine with a simple green salad with a homemade dressing. This recipe would also be good as a simple starter and ingredients can be easily increased to serve more people.

Baked mushrooms.


  • 250g mixed mushrooms
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 15g grated finely grated parmesan cheese


  1. Preheat oven to 200°C.Baked mushrooms with a simple green salad_picture 2
  2. Place the mushrooms in a small baking tray.
  3. Add the olive oil, dried thyme and grated parmesan, sprinkle with salt and peper and put in the oven for 15 minutes or until tender. While the mushrooms are baking prepare the salad.
  4. Remove from the oven and serve hot with my simple green salad.
  5. Enjoy!

  • 3 cups mixed salad leaves
  • 1 cucumber
  • handful of grape tomatoes
  • 2 tbsp olive oil
  • 1/2 lemon, juiced
  • 1 tsp wholegrain mustard
  • 1 tsp honey


  1. Thinly slice the cucumber into half moons and add to a bowl with the salad leaves and grape tomatoes.
  2. In a small container mix together the olive oil, juice of 1/2 lemon, wholegrain mustard and honey.
  3. Pour the dressing over the salad and serve.
  4. Enjoy!
